Gotthelf Emmentaler Cheese Cutting
Friday, November 5, 2pm-4pmCalling all cheese lovers!
Jimbo's is cracking a 200 LB wheel of Gotthelf Emmentaler AOP cheese on Friday, Nov. 5th at 2pm. Not only will you get to see this massive, beautiful wheel of cheese, but you can also taste from the freshly cracked wheel through the evening and weekend!
Some cheesy facts:
- Gotthelf Emmentaler AOP is the only Emmentaler cheese with the Slow Food label.
- Don’t be confused by "Swiss" cheese, this is the original recipe from the 13th century that has been passed down by generations, often copied, but never really replicated.
- Named after a famous author (Jeremais Gotthelf) who told a story of how a creamery was built instead of a much-needed school in a small town and how that emblematized the Swiss importance of agriculture and its rich cheese history—even over the education of their youth. The story is illustrated on the label, which is also a differentiator from other Emmentaler we see in the market in San Diego.
- Why is Gotthelf more unique than other Emmentaler from Switzerland? They make their own started cultures in their own kettles and refuse to use the mass-produced cultures to preserve their own flavor profile from their raw milk (Terroir at its truest).
- This hand-crafted artisan cheese is from the heart of the Emmentaler region in Switzerland. Cows produce less milk each day because it is produced at a high altitude, but the altitude also leads to nutrient rich pasture grasses and hay giving a much richer milk and higher quality.
- The wheels are cared for, washed, and flipped every week for 14 months in caves that were built for cheese aging in 1811. Each batch is tasted several times and when it’s ready it is selected specifically for Jimbo's and sent on a long journey to Jimbo's 4 San Diego locations.

The 19th Annual Lighting of The Forum
Saturday, November 27, 6pm to 9pmThe holiday season officially kicks off with “The Lighting of The Forum.” Friends and families gather to enjoy a live Holiday Musical Stage Show, Santa’s Grand Arrival led by the La Costa Canyon High School Marching Band, the Lighting of the Christmas Tree, followed by an incredible Light Show and Magical Snowfall. Following the light show, children are invited to Visit Santa on the stage. We’ll have prizes, surprises and lots of holiday fun for the entire family!
